Title: Cold Smoking Box for Smoked Cheese

I smoked a variety of 8 oz blocks of cheese on Saturday night. Below are a coule of pictures.

Looks great, Doug!  How much above ambient did the temp go with that setup?

BTW, congrats on your new star [:D][8D]

The temp on the door read 55 degrees when I rolled the smoker out of the garage. The temp outside was 22 degrees. The temp in the box did not change the entire time the smoker was outside. Ice was just barely melting.
   I smoked with maple for about 2 1/2 hours. The cheese looked kind of light colored when I was done but the flavor was just right. The wife and daughter gave it two thumbs up!!![:D][:)][:D]
