The Smokeouts are over and I have been requested to DRAW Again from the list. Which my 5yr old has done and the items have been revealed to the person who will be sponsoring Iron Chef Bradley II. Miss Deb. When I get confirmation from her on the ingredients. I will post them here. As before you will have 2 weeks to prepare and then turn in your pictures. The turn-in will be July 13th - July 15th. So everyone will have 2 weekends excluding the July 4th weekend. Voting will be July 16th through Sunday the 19th.

For those that are new to Iron Chef Bradley. Here are the basic rules of how it is done. (The first ICB was won by a newbie)

I post said ingredients and yall have two weeks to come up with a dish. It must be primarily cooked outside on grills, smokers, car engines, etc.... There is usually a two week period for creativity and fitting in everyone's schedule. Once the two week period is over a thread opens up for entries and you have to post pics of the process and a final plated dish.  A poll will be created and we vote. It's pretty fun and some of the dishes are incredible!! It's just a way to get the creative juices flowing and get out of a rut and maybe cook something you've never tried!!  We will have a "smack talk" thread going. All 3 ingredients must be used in the one dish.

Basic Iron Chef rules:
Be creative on your recipes.
It can be as simple as a new ABT or a recipe that would take a snooty waiter in a fancy-schmancy restaurant 10 minutes to describe.
At least 80% of the cook time must be done in the Bradley Smoker, grill or other cooking method.. Up to 20% of the cook time can be done on the stove or oven.
Use any spices or pre-made BBQ sauces, or other goodies as you wish.

The recipe is not limited to just the 3 main ingredients. Your pantry is open and anything is fair game to be used in your recipe. As long as the meat and two other ingredients are in one dish. ie...one bite gets all three ingredients.

It can be breakfast, brunch, lunch, or supper, or midnight snack.

Voting will be done in the form of a poll. You will only have to pick your favorite and vote for that one.

Do not post any entries until the turn-in date. That date will be Example:Monday, February 11. Entries may be posted beginning at 5pm on that date with a cutoff time of 5pm Tuesday evening. Hopefully that will take into account everyone's working schedule.

You have two weeks to prepare. There will be a comments/discussion thread.

The only right way to do this is for me to visit each entrant's home location so I can taste and render a professional opinion on their creations.  I would post my tasting notes on the forum, allowing other voters a better basis on which to cast their ballots.  Any other methodology is simply an exercise in food photography.

Oh, almost forgot.  We'll have to charge an entry fee to cover my travel costs.

We have enough time to cure a ham but............  I think it should be what ever ham you want.  Ham you have cured or store bought.

Man, I was hoping for oxtails!!!!!!! A real challenge!

Ham, potatoes, pizza dough - mamby pamby stuff - something Rachel Raye, Sandra Lee, or even the Neely's would take to! 

Now that it is summer, we don't have as much rain - so game on! 

Just as the trout flee when they see my mighty Helios flailing away in the sky, so must smokers tremble when they see my thin and blue rising to the heavens!

Thank you for ingredients that I like...I hope to be entering this time (last time I didn't have anybody around to eat some of those ingredients, and I don't waste food on purpose).

Just for clarification, do the potatoes have to be actual real ones or can they be out of a box (potato flakes) or frozen (ore ida hash browns or fries)?

My thoughts are this.
Ham is Ham nothing else.  Spam is out because it is an ingredient that can be drawn again.

Potatoes as long as you show a round freshly dug out of the bag potato to start with and your process of slicing, dehydrating and stuffing in into a box then rehydrating and using in your recipe. Otherwise it is what ever you can make with a whole potato.

Pizza Crust. I envision these as store bought usually 2 or 3 to a pack. Deb has already ok'd the use of fresh pizza dough.

People this is an Iron Chef it is not ment to be easy. But it is ment to be fun. It is ment to make you think outside of the box but you have to play with the toys that you where given. Not try to substitute for something easier.

Hope I clarified some things from my point of view. Keep in mind I just woke up and have to go to work again tonight and I never wake up in a good mood.

To add to this.....  french fries, tater tots are also ingredients that could be drawn in a later competition.  As are sausage & bacon........   It will be a wild iron chef the day bacon is drawn ;D

Because of the timing of this, I won't be able to participate. But why limit the definition to cured ham. Fresh hams can be smoked, and taste great. I have smoked fresh hams a few times. This will give those that don't cure the opportunity to start with a raw cut, it they so choose.

and to address a pm that I had....  hope I get it all answered...

The intent isn't to have anyone feel they have to cure a ham.  It can be purchased already cured.   Maybe I shouldn't have included the picture of the ham that I cured & smoked myself.   10.5 will jump in later (I think he worked last night, so give him some time to sleep) but I believe the thought is that fresh ham would be part of a general category of pork.  Also, you don't have to purchase an entire ham - you can buy a ham steak, slices or pieces.   When I was referring to processed what I meant was chopped up, mixed with other things and reformed back into some shape.

Gamefish if your a member of the forum you are more than welcome to join in on the ICB. Just remember you have to be able to taste all three of the main ingredients in one bite.

As for the Ham thing I think Deb has pretty much beaten that horse to death. And NO you don't have to cure your own ham!! Do like I am I am using my favorite saying. "I am going with the KISS principle" (Keep It Simple Stupid) What can I make with a store bought chunk of HAM, A POTATO, and a PIZZA CRUST/PIZZA DOUGH?

Mine was sooo gooood, Bradley insisted I take up 2 posts so I had to split it.  I wouldn't deprive Ramsey the opportunity to sell my dish in his restaurant for $90 bucks a plate but he will have to use the first Term "Pork Wellington".  I can see this category going down in the BBQ circuit in a brand new category.

I Just realized that we have conflicting info for the voting dates.......  this thread (the original) says voting will be July 16th through July 19th.....  the turn in thread is different.  I'm going to edit the turn in picture thread to July 16th to 19th.

Nah, they are intimidated since they heard Ramsey was looking for my post for his next yelling I mean competition show.  They will be replacing the Beef Wellington with my Pork Wellington.   ::)  8)

We have been through countless keurig machines at my office. Not real reliable. It's a good thing it is the coffee services problem.

Since there seems to be some confusion over the dates and not a lot of entries. I would suggest extending the turn-in date until the 19th then the voting will start on the 20th and the winner will be announced on the 24th. Just a suggestion to clear any confusion.

I won't be around much today.  Huge t-storm no internet/cable. At least one fried tv. Thank god for iphones -  still get to get my internet fix but harder to post
