Title: 135 max temp??? Help
Post by: skearney on July 05, 2009, 06:48:49 PM
We just did our 1st smoke. Used some older salmon and our liquid brine that we used with our little chief smoker. We were unable to achieve any higher temp then 135....  Could our salmon been to wet? Should we have used a dry rub...or i read that drying until glazed...

Look to see if the heating element on the back of the unit is glowing red.
I suspect it it not and you may not have a good connection on the plug going from the smoker generator to the oven unit.  Check both ends, plug and unplug several times.  Push plugs in hard.

You should still be O.K.  Cold smoked salmon is great.   :D

I'm glad Giz got you going, the only thing I can add is with a wet brine be sure to leave the top vent wide open. You need to allow the moisture to get out. Welcome to the forum.
