Welcome RkR

FL gots ya right, I'd go at 200.  A 5 lb.er I would guess is just the flat?  Depending on how much of a fat cap ya got will kinda determine how long and how much (if any) AJ you'll need.  I tend to err to the 1.5 hours per pound @ 200 low and slow is the name of the game, but without drying it out.  Brisket large or small it still takes time to break it down, alot like a pork butt....it will plateau...I'm guessing about 8-9 hours in the oven after 4 hours in the smoker.  And once again the fat cap is a crucial part of this.  But mesquite is a very good plan!  :D
