I put some Jan's rub on them, gave them about 3 hours of Oak/Maple, then 30 minutes in the convection oven @ 350F

Now that is some great looking bird! Looks like the skin crisped up real nice. I would guess a regular oven would take longer, any ideas on that? Got to try that out soon. ;D
I almost always use the convection option... but I would think that the temperature alone would do it.

We haven't made it that far yet... Next weekend we are going to the west coast of Florida, Fort Myers beach.
