Title: Smoker Sticks

One item I would like to see Bradley offer is smoker sticks to hang sausages from.  I made my own from aluminum angle stock, but would have gladly bought them if available.  I just put them across the smoker from the supports that the racks rest on.  That way you can hang sausages verticle so that any grease produced by not so perfect smoking (which I have done on occasion), will run to the ends of the summer sausage and can just be cut off.[xx(]

I haven't smoked sausage...YET!  But I'm curious about whether or not  you could invert the top rack and use stainless steel 'S' hooks to hang sausages from the rack (and other "hanging" meats)??? [?]

I have been using the metal rack that came with it. Slide the sausage string through one of the holes in the rack and put a small stick (actually been a twig right now) through the string.

Before I had my Bradley I used a converted refrigerator to smoke in.I hung the rings of sausage from wooden dowls. Worked OK but not great, the bottom of the rings would get hard and almost burnt till the temp was right on the top rings. For this reason I like using racks for even heat & smoke.Never had to rotate the racks although you could about half way through. I have nice pics but havn't figured out how to post them.[:(]I used extra racks when I used the Bradley and doubled the capacity.I'll probably never hang my sausage again![V]

I find S hooks to be a quick and easy alternative to smoke sticks, though I use both depending on the situation. I also use them in the fridge for hang drying various products.

Regforte and Kummock,

Thanks for the suggestion on the S-hooks.  I am going to start making some sausage next month.  (Have to wait to buy the F.Dick stuffer I want.).  Have ordered and received about 50# of different whole unground spice to start making my own rubs, and to season the sausage.  I like to grind up my own, and a little chunky is a good thing for me.

These are much too big and too pricey for me.

I want a good stuffer, as I know my daughter will borrow in their yearly sausage making party, and I know I want to start doing some too.  I just don't need a 30# at a time stuffer...I am new to it, and think it would be fun and very tasty.

Glad to save from getting a red face looking for F. Dick on internet searches![:)]
