Title: Boneless Stuffed Whole Chicken with Rice/Crayfish
Post by: classicrockgriller on December 03, 2009, 02:35:06 PM
Been wanting to smoke one of these since I got my Gabi (my Bradley).

A 3lb de-boned whole chicken stuffed with rice and crayfish.

I tied it up to keep all the rice inside.

Sprinkled some seasoning on her backside.

I am smokin this thing at 220 w/ Hickory.

The beast below is 13lb+ brisket.

Awe CB, I too am not a brave man. But I had a plan. And my plan never was to "smoke" a stuffed bird at 220 and expect to live to tell about it.

2 hrs of Bradley smoke.

Then ........ foil and in the Traeger at 325 for hr or so.

When I took the bird out of Bradley the IT was 121.

The second picture sort of looks like maggots crawling out.
Maybe you shouldn't post a final picture. ;D

I let the IT of the chicken rise to 185 due to the fact it had a "stuffing" in
it and with the foil I knew it wouldn't dry out.

Yep,
I believe Moonie could handle that request.

Ronbeaux, there's also a place over in Metairie and over on the west bank that could fill the bill too.  Name of the place escapes me at the moment.

Moonie is the one that loaned me the big rotisery pit I was using during the tornado.

Well I talked to my Butcher and he will do a 9 to 10 turkey for me (de-bone)

I got a cpl of whole chickens yesterday and I am going to practice on one myself.

Anyone got an easyway of deboning a whole chicken without defowling ( ;D ) it.

CRG,
Strolling through the grocery this afternoon.  Look over in the frozen turkey freezer and what do I see? 2 Tony Chacere's turduchen rolls stuffed with creole sausage.  Guess what 2 items are now in my freezer? ;D

Wish I like duck. Use to hunt them down but always gave them away. Probably never had them fixed right.

Would be nice to know the taste and texture when you smoke/grill that thing.

Why what would make you think I was going to smoke those things?  ;) :D

Didn't check the cooking instructions but I'm thinking about wrapping it in bacon before I smoke/cook it.  Believe it or not I know a little about  homemade bacon wrapped turduchen rolls. :D

Not for the rolls.  Full Chacere turduchens are at least $50.

BTW, if you haven't seen them, go back to page 2.  My turduchen rolls are stuffed with jambalaya.  Not bad for an old guy from Kentucky huh?

You stuck them pics in while I wasn't looking. ;D ;D They look awesome! I'll have to look for those.

Thinking of a de-bone Turkey stuffed with dirty rice/venison green onion/jalapeno sausage (All Homemade) and the Lemon Turkey Breast for Christmas.

CRG,
The photos I posted aren't the Chacere turduchen rolls.  The one in the pics are KyNola's homemade turduchen rolls stuffed with jambalaya and wrapped in bacon. :)
