Title: "I am sick of Turkey"

My wife actually said this the other night.. (after having smoked turkey, oh, every day for a month)

Ok then!

Cue the guys with the sharp knives and white lab coats:

9 pound chuck roast.   That cost a pretty penny, but we'll see how it compares to brisket.


I'm also doing a 8 pound pork butt for a coworker.   Mustard slather, and a heavy coast of Bad Byron's Butt Rub:

Here we go!  3.3 hours of Pecan and a temp of 220* (measured at the top of the cabinet - we'll trick the Ranco into allowing it to go a bit higher in there)

It's currently 19 degrees outside.   No wind.   This should be interesting.   I have a small fan in the cabinet helping push the smoke/moisture away.   It's gonna get wicked cold, and I don't want condensation dripping back on the OBS. (or liquid smokecicles forming)

I'm monitoring the chuck and the cabinet temp with my ET-73.   We'll check back later to see how the Bradley is doing.

That looks great Squirt.  Suppose to be in the low 20's here tonight, brrrr.  I have to do a few butts soon to bring with me up to WI for the holidays, rt was requested.  I could probably just send the pulled pork and they wouldn't even notice I wasn't there.  :D  hmmm

Thanks Bear.  It will be a loooonnngggggg time before we see the end results.   I'm just hoping they both get close to done (shooting for 200*) before we have to leave tomorrow afternoon for my company Christmas party.  If they are close, I'll FTC them and pile the towels on.   If not - they'll go (in covered pans) in a roaster at 200* and I'll pray the cats don't pry the lid off and tear into them before we get home at midnight.   :o

The chuck roast will be shredded/chopped like pulled pork.   That is it's destiny..

I filled the pan, rotated them (left the butt on the bottom), and put the meat probe into the butt.   It's at 170, the chuck is at 155.

Oh, no doubt..

I think an off the shelf Braun range hood will do the trick. Run a vent out the side of the cabinet.

I just need to measure everything about 6 times before I cut into the plastic.

I measure and write it down, lose my measurement before I can find my saw, re-measure and write it on the back of my hand, wipe my hands before I cut and lose the measurement again. Then I take a break.

Sunny now and the wind is picking up again.  I just ran out and bungeed the doors together.

I'm glad my Ranco is underneath a shelf, as that ice is melting and dripping everywhere.   Yuk!

13 hour mark.   

Butt is at 180*, chuck is 154*.   We'll see what is happening at 3PM.   I'll probably put the chuck in the crock pot on low, as we have to leave the house by 4.   The butt *might* be done by then, but I doubt it..

Heck, I might just jam them both in the crock pot and let them play together while we are gone!

Out of this freakin world good...  Almost like brisket.
The mustard slather plus Magic Dust make for an awesome bark.

I don't have a kitchen scale (yet), but I think I have more actual meat at the end with this, than when I do a brisket.


At the Christmas Party last night, they had a carving station w/ prime rib.   I'm standing there (blocking the line) staring at that thing...   (wheels are turning)

We just had a few chuck sammies..   If I can get it on sale, I'd say it's almost as good as the briskets I've done.

Next time I'll go with 2 smaller roasts, and maybe inject them with something to introduce a little more fat/moisture.

4 Buck Chuck is a bit steep, but this week, he's going for $2.50/lb.   Might have to snag a couple for the freezer.

I sent you several pictures from the phone this weekend - only to find there are some "black holes" in Branson (several pics never went through).
I really enjoyed the shows down there (I must be getting old).
BUT - That place is a mess...

I expected everything to be more "centralized". 
The town is spread all over the place - like some kinda Pidgeon Forge on steroids tourist h*ll spaghetti...
With blue haired people driving into each other at 4 MPH...

We have a little bit...   ;)

I picked up a digital scale from Wally World and divied up Butt & Chuck into ~1 pound vac bags. 

For the record:  8 pound butt yielded 4.5 pounds of actual pulled pork.  9 pound chuck (after lots of midnight munching, cold breakfast carnivore raiding, and a few sammies for lunch) had 4.25 pounds left.
