Post by: seaeagle2 on December 13, 2009, 01:03:09 PM
Anybody have any advise on smoking marlin or dorado, I've heard smoked marlin is good (http://www.fisharc.com/assets/0000/2116/xxlarge.jpg)

Kinda think you might have to cut em up a little smaller, looks to big for the Bradley.  :D Nice looking fish, always wanted to get me one and hang it over my door.

Seaeagle we do alot of that down here

here's one alot of people use

Maple Cured Smoked Marlin
Ingredients
• Sliced Marlin fillets with skin on
Brine: lightly Sprinkle Bradley Maple cure over fish fillets
Rub in Maple syrup on fillets and refrigerate overnight

Additionally add a sprinkle of Garlic powder depending on taste requirements
Smoking Method
Preheat the Bradley Smoker to between 65°C and 85°C (150°F and 200°F).
Dry at 140º F (60º C) with no smoke until the surface is dry.
This will require at least one hour.
Raise temperature to 160º F (71º C), using maple flavoured Bisquettes smoke/cook for 3 or 4 hours depending on thickness of fillets.

This recipe also goes well with Apple flavoured Bisquettes.

Thanks, I can hardly wait to try it, something a little different than the usual salmon.

Well, I smoked up the last piece of Marlin we had in the freezer, and it turned out awesome, thanks to Gamefish's advise.  I used the Bradley maple cure, we had some maple syrup sitting around, and it turned out great. It was the last of the marlin, so I guess we'll have to make another trip to La Paz sometime.  Now I just need to get around to the 12 salmon in the freezer.

Did you catch that puppy ?
I went fishin in the Domican a few years ago and all I caught was a hang over
I did boat a 34 pound king salmon many years ago ina fresh water lake that is hanging on my wall
It was never eaten, too large

I need to go fishin again one day
I think Iam having one of those Jimmy Buffett moments again

Actually, the boys each caught a marlin, the first day we got a bunch of Dorado, and the guide said we'd troll for a marlin on the way in. The boys were watching and actually saw the marlin chase and hit the lure.  We got another one the next day. We were fishing out of La Paz, Mexico.  The smoked marlin is all gone now, we used some to make a dip or spread, and and rest just got eaten up, it was very good.
