Title: 1st time brisket, along with pork butt
Post by: kleen2000 on December 23, 2009, 06:12:19 AM
Doing my first brisket tonight for a Christmas Eve dinner. I've spent ALOT of time reading the information on here (thanks Pachanga) and feel like I've got a pretty good grasp on it.

Will be cooking it at the same time as a pork butt. My question is the placement in the Bradley. My thought is to put the brisket on second rack, butt on the third rack. That sound right? Should I do them reversed?

I would probably put the butt under the brisket, since it has more mass.

Kleen2000,

I hope your smoke turns out great and some of what I have shared contributes to the success.

I do not disagree with FlBentRider.  His logic of the larger mass on the bottom is sound.  The Butt is more forgiving than brisket and it will protect the underside.  I do not think the flavor of the butt will be hurt by the brisket drippings.  It may be a little different (or maybe not) but may be the best you've ever eaten.

I will look forward to hearing your results.

Good luck and slow smoking,

Pachanga
