Title: cold smoked cheese

When smoking cheeses do you need to put anything under the cheese to prevent melting to the racks or does it even matter? I know my buddy uses popsicle sticks under his and seems to work well.

You are fine putting the cheese right on the racks.

Just make sure to keep the temp below 80 deg.

Agree with HS, I didn't put anything under mine and they were fine. You could use cheesecloth if you want to, but it's not necessary.

Mine goes right on the rack, even the Velveeta. I like to keep the temp around 85 degrees.
