Wally World had bone-in Turkey Breast for $.69lb and our ChristmasTurkey went so quick just thought I would smoke one.
I de-boned it marinaded it Creole Butter over night.
Tied it together and injected it with some more Creole Butter.
Gave it some Cajun seasoning.

Along with it I took Block Boudain cut into squares and wrapped in Bacon.

Added 5 lbs of Eckrick skinless sausage split in half, 8 links of Jalapeno/Cheddar sausage and Fresh Sliced Pineapple

hal I wouldn't have eat this but since I am having to smoke and post food for the both of Us,

Everything in the smoker looks great. Everything on the plate is cool. But a TEA! Come on that just ruined it for me, it has to be a draft or nothing. Still can't get over that, oops unless your on the wagon. If you are then I apologize. Have the tea.

hhhmmmmm, pineapple. Now there is a thought I can use. Smoked pineapple blended with honey so it's like a glaze and then spread over some ribs for the final glaze before turn in. hhhmmmmmm
I've already used Smuckers pineapple sunday topping with success and also some cherries. The smoke might just put it over the edge.

They come in handy for a lot of things.
I like it for the option of where you smoke at!
Dale I used them tonite. Had 6 racks of food in there at one time.
When I talk to you remember to ask how many tries it took me to get that right.
