My cousin is looking for an East Carolina BBQ Sauce recipe, and my copy of Smoke and Spice is about 130 miles north of here at the moment...can somebody post a good one that I can send to him? He just got a Brinkman Electric Water Smoker and did a butt with my version of Wild Willy's Rub, next up we got to get him going with a Bradley!
You can try this one from Bob Garner author of North Carolina Barbecue
Use just enough of this sauce to flavor and moisten smoked pork shoulder
Cider Vinegar Barbecue Sauce
1 1/2 cups cider vinegar
1/3 cup packed brown sugar
1/4 cup Ketchup
1 Tbsp Hot Sauce
1 tsp browning and seasoning sauce
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp Worcestershire sauce
Stir together all ingredients in a medium saucepan; cook over medium heat, stirring constantly, 7 minutes or until sugar dissolves. Cover and chill sauce until ready to serve. Makes 2 cups
Thanks! I have passed it on!
Vaunted vinegar sauce is also popular in that region.
