Title: My new helper

I've been putting off this batch because my wife's girlfriend, Julie, wanted to come and help make sausage.  Ground up 6.4 pounds of boneless butt during the week and seasoned with the hot Italian sausage recipe from Charcuterie (Ruhlman).  The stuffing took place on Sunday.  A couple of comments after the pics.

I used collagen casings.  The gray looking one was casing right out of its cellophane pack.  The red looking one is from casing that I used some of and then put in a zip lock bag.  Maybe it was moisture.  In any case, they both looked pretty much the same after a day in the fridge.

The flavor was OK but I would have liked a tad less heat (cut down on the cayenne) and more flavor (up the spices). 

But, it was a fun afternoon.

Looks like a good pile of sausage Arnie, must be nice to have all that help  :o

Never turn down an offer to help. So did Julie say the same thing that my brother did after he helped for the first time. "That's all there is to it? Man that was easy and fun too."

Good lookin pile of sausage you got goin there Arnie.

Looks like your helper is havin a good time, got her apron on and ready to get dirty, bet she had her sleeves rolled up by the time your were done.

I like a good spicy, not hot, Italian sausage and havent found a recipe that hits it outta the park for me yet eather.

They all need more flavor, like uppin the oregano and fennel and maybe addin a pinch of anise.

You got me wantin a hunk of Italian sausage just thinkin about it.

I had some bulk Chorizo in Mazatlan last week...  I really liked it.  (mixed some in a pasta sauce - tasty!)

I need to get my stuffer out one of these days.....

My first choice was Mexican (bulk) Chorizo but Julie was just so excited about stuffing, so ...
