how long on average
Saw a show on Food network
BBQ joint smokes and cooks for 18 hrs @ 215
I was planning same smoke for 4 hrs ...
any thoughts
Need to go for IT not time. The butts I have done have taken 1 1/2 to 2 hrs per lb to get to an IT of 195F

4 to 6 hrs of smoke is good.
IT 190 to 195.
