As most of ya'll know DarqMan (Steve) is gonna be down for a while.
I know he is gonna get Hungry! ;D He'll need to eat good to get his strength back.
So I decided to smoke some goodies, vac pack, freeze and send over nite to him.

Absolutely awesome! Wish I was near ya I'd give ya a hand. I just read about this.... Yikes! He's in for a healing process to say the least but thank God he's still around to talk about it. I've been through a couple of bad accidents and wouldn't wish it on anybody.

Since my 6 rack is 18 racks I used the last shelf for the heat shield (Idea of Southern Smoke)
Took the fan blade and reversed it so it blows the hot air out from under the heat shield.

That heat shield and the fan may have turned the Bradley into a smoker from H#ll.
The first butt went on at 5:30, the second 5:45, the first brisket at 6:15 and the second
brisket at 6:30. The big butt is already at 155* IT. WOW!

I think you just invented a Bradley Convection Smoker! Great idea on the heat deflector w/ the multi rack layout... (stealing that idea for sure)

More info after coffee (lots of coffee!)
CRG, that heat deflector geometry on the bottom rack with the fan beneath is just about the same as what I've been doing with a foil covered brick along the back edge on the same rack. I also put a second foil covered brick in the front of the rack and lean it to the front edge of the rack. With the fan it seems to create a sort of chimney for the heat moving up in the center. I also put a large square foil covered paving stone on the top rack. Doing that on the 2nd and 3rd racks up from the bottom I can't detect much of a gradient front to back within the rack dimensions. It works great for me.
What I thought was going to be a quick smoke due to the early
high IT, turned out to be a marathon. The first butt came off at 24 1/2 hrs.

I am gonna weight them before I pull em and see what the loss of fluid was.
This is an after-the-fact thought but, any chance those butts were of the "always moist" or "moist and tender" or something similar enhanced variety? That might explain the unusually high ooze.
The 11.4 butt weighted 8 1/2lbs after FTC and got almost 7lbs of pulled pork from it.
I'm still scratchin my head over this one.

I think if I had a v tray look like that I would throw it away and say ahhh, they can't be that expensive. On this same subject, my parents were visiting this weekend and they said if you ever have problems cleaning the racks or v tray up, they said throw them in the grass overnight and they said the dew just melts the junk off. They say they do it with their grill rack sometimes to clean it up. I had never heard of this before, so thought it was interesting.

Sonny, I can't even begin to tell you how much I appreciate your generosity. I've been wanting to smoke something so badly but it now looks like I'll be without my other arm for at least another two weeks. Plus, standing for more than a short period is really difficult. This will definitely satisfy my appetite for some world class BBQ!

I just warmed up a pack of chopped brisket and thought I'd eat half tonight and half for lunch tomorrow. That plan didn't work because it's ALL gone. I put some Head Country sauce on it and barely came up for a breath. Best meal I've had since I've been hurt. Now what will I try tomorrow? ;D
