Title: smoke ribs

newbie hear i want to smoke some ribs for saints game and keep see the method 321 is this correct 3hr smoke and 2hrs ftc and 1hr cooking w/sauce

Pretty close.  The 2 hours is just an F - in the smoker.

Just remember that is a quide to help and doesn't mean they are cooked

on a time basis. It could be longer or shorter time.

When using the 3-2-1 method, if you don't like that much smoke on your ribs, you don't have to apply smoke for the full 3 hours. For example, you can apply 2 hours of smoke and let then cook unfoiled for the other hour.
