Title: Jerky again but have another question
Post by: AlamanceNC on October 20, 2010, 06:37:29 PM
I'm heading out to the store in a bit to pick up some meat. After my last batch of jerky I've got some fellas at work that are begging for more so I'd planned on doing some tomorrow on my day off. Only problem is, I don't have time to allow the cure to set 24 hours like last time. If I got a good 12 hour span in the fridge would this be sufficient enough? I'd like to be smoking by noon tomorrow. 1/8 to 1/4 slices is what I'll be working with.

Well, the jerky is sliced and in the fridge marinating in a dry rub of spices and cure. I cut it just shy of a 1/4 inch. It's going in the smoker around noon tomorrow. They better eat it fast is all I can say.  :P

10-4 Thanks. I'm going to do 12 hours.
