ok so i now make (in bulk) the iceman rub that he so graciously shared. now i am wondering what if you added some coco powder to a rub? i have added chocolate to my chilli and some various sauces and had good results. let me know your thoughts.
Nothing wrong with coco powder in a rub. Some rubs made by very famous chef's include coco powder along with other more dominant ingredients. See this thread (http://forum.bradleysmoker.com/index.php?topic=18502.msg224446#msg224446) and the recipe link in the first post.
I used a chocolate rub in the very first Iron Chef Bradley the recipe is in the turn in thread Here (http://forum.bradleysmoker.com/index.php?topic=10053.0)
I recall a Man vs Food or Diners, Drive-Ins and Dives episode where he was at a famous BBQ joint and there was a little cocoa powder in the rub. It was a fairly large batch and there wasn't a lot of cocoa powder in it so I would be careful with the amounts. Didn't seem like very much was needed to impart it's flavor.
