I placed the Brisket on the third rest from the top.

I couldn't place on the bottom rest since I use that for the Heat Diverter

I used a Budweiser Lager...

for making a mop sauce!

Basic Beer Mop:

12 oz beer (Don't use Lite beer, will make it bitter)
1/2 cup cider vinegar
1/2 cup water
1/4 cup vegetable oil
1/2 medium onion, chopped
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 tablespoon of your favorite rub

In a saucepan mix together the mopping ingredients and warm over low heat!

I like a lot of smoke so I used about 5-6 hours...

After 3 hours in I begun to mop the Brisket with the Budweiser sauce about every hour or so...

Bourbon BBQ Sauce:

Ingredients

   * 1/2 onion, minced
   * 4 cloves garlic, minced
   * 3/4 cup bourbon whiskey
   * 1/2 teaspoon ground black pepper
   * 1/2 tablespoon salt
   * 2 cups ketchup
   * 1/4 cup tomato paste
   * 1/3 cup cider vinegar
   * 2 tablespoons liquid smoke flavoring
   * 1/4 cup Worcestershire sauce
   * 1/2 cup packed brown sugar
   * 1/3 teaspoon hot pepper sauce, or to taste

I had these custom made to fit my Bradley.

classicrockgriller also has one that I sent him.

I had been making a foil reflector until SS sent me one of his he had made.

I love it. Especially on Butts.
