I have read that sturgeon is more like veal or a regular white meat without any fishy taste.

There are links about smoking sturgeon, and most seem to use basic brine and high temperatures. Not a procedure that would be used for fishes.

Hi Afishinado;
Welcome to the forum.

I have eaten freshly smoked sturgeon, and it is good. There is a city nearby me that has a festival during the sturgeon run.

Roadking use to smoke sturgeon, hopefully he will see this when he logs on.
