Title: Rub Marinating times

Hello all.  Am doing some baby back ribs and a pork butt this weekend.   I have laready got the ribs rubbed and in the fridge until tomorrow  AM. THanks Ten point for the rib tips on your "How to" thread.

Question is I wont be starting the butt until the ribs are done tomorrow afternoon.  Should I rub the butt tonight and let it marinate until Saturday afternoon or just apply the rub tomorrow morning or does it even make a difference?

Rub the butt tonight.

I've done them using both methods, there is a difference in bark development. It's not huge, but you can tell.

I just finished putting the rub on the two I have for this weekend.

I will start the ribs at around 7am and hopefully be done by 2.  This is my first time with ribs and butt in my OBS, Still a newb with the OBS but a seasoned vet with the chief and they are two different beasts.

BB won't take as long as spares.

I think you will have plenty of time to be done by 2.
