Welcome to the forum! Hope you're using a cold smoker attachment for that cheese or it might get a little warm in there.

You'll love the smoked cheese but like everyone says, you need to let it sit in the fridge for weeks. Here's a link that shows my first cold smoked cheese using the cold smoke adapter and some ice cubes in the tray to keep the temperature down. http://forum.bradleysmoker.com/index.php?topic=18373.0 Hope it helps. Smoking and low and slow cooking requires patience. It took some time for the cheese to age in the first place. Now, give it some time in the fridge.
