Hi,

I'm a French expat living in England, proud owner of a 4-rack digital Bradley smoker since yesterday!

Let's try it with cheese and salmon this week end!

Hi aerostef and welcome to the forum!  Make sure you let the cheese rest in the fridge a couple of weeks prior to use.

Welcome to the forum! Hope you're using a cold smoker attachment for that cheese or it might get a little warm in there.

Welcome to the forum aerostef.

You'll love the smoked cheese but like everyone says, you need to let it sit in the fridge for weeks.  Here's a link that shows my first cold smoked cheese using the cold smoke adapter and some ice cubes in the tray to keep the temperature down.  http://forum.bradleysmoker.com/index.php?topic=18373.0  Hope it helps.  Let the fun begin  ;D

You can't seriously expect me to wait for a couple of weeks to try my smoked cheese  ;D

I seasoned the DBS yesterday, let's see how today goes!

Smoking and low and slow cooking requires patience.  It took some time for the cheese to age in the first place.  Now, give it some time in the fridge.
