Title: Christmas Brisket

Hey All,

I'm overdue for smoking my next brisket. So I figured I'd do one up for
pre-Christmas festivities.

Picked up a 10lb'r from the Mad Butcher in Innisfail, AB. It's a specialty butcher
not far from Red Deer, AB. They are one of the very few places where we can
get a decent brisket.

This will be my first time smothering the brisket with Carolina Treet. Last smoke
I used mustard and really liked it. My final rub is brown sugar, onion flakes, garlic
powder, paprika, and Tandori/Masala spice. It smells awesome. Not sure how it's
going to taste but that's part of the fun right?

I'll flip it fat side up when it goes into the smoker.

I took my wife for a trip to "Little India" to walk all the grocery/spice
stores recently. She was completely overwhelmed with all the different
spices available.

She has really taken an interest in trying / making different rubs.

I'm hoping this brisket turns out good. The rub smells fantastic,
sweet and spicy.

Pre-heating the smoker now. I have it set at 250F and the temp is
hovering at about 220F (w/SG on). It's -16c out right now.

Going to toss this beauty in soon.

She's out. 14hrs later. FTC'ing right now.

I'll post some pics later today. I'll be hacking it in half and vac
packing it for it's 8hr drive to Saskatchewan Thursday. I'm going
to sneak a taste test in there. lol

I wish I could have timed it better for the trip but I didn't need the
headache. It's tough enough packing the wife and kid let alone adding
in a 10lb brisket baby. lol

Well she's out.

I have to let her cool down so I can package it for its journey.

Of course the wife and I had to sample it. The knife went through
it like cutting butter.

It tastes awesome!

Beautiful brisket.  The sliced shot clearly shows the difference in grain direction of the point vs the flat.

Way to go LDVC.
