Title: Rckcrwlr's Dilemma...What should I do when...

My butcher calls me...

Rckcrwlr: Hellllloooo!

Butcher: John, what's up?
Rckcrwlr: not much, how about you?

Butcher: Not much, your Briskets will be cut tomorrow for the big game (Steelers/Jets AFC Championship) on Sunday
Rckcrwlr: Perfect man...make sure they are extra special

Butcher: will do bro...
Rckcrwlr: Cool...what can I do for ya

Butcher: I have a favor...well a deal, for you
Rckcrwlr: Oh yeah, and what would that be?

Butcher: Can you smoke me some of those, what do you call them, Baby Boulders?
Rckcrwlr: Sure can, when do you want them?

Butcher: For Saturday
Rckcrwlr: Yeah, I should be able to do them, How many?

Butcher: 12
Rckcrwlr: 'thump' then pick myself off the floor.  Why 12?

Butcher: Now here is the deal...if you can do that for me, I will give you a case of breasts for yourself.
Rckcrwlr: 'thump' 'splat'

Butcher: John, you OK?
Rckcrwlr: Yeah, sounded like you said you would give me a case of Baby Boulders if I smoked 12 for you.

Butcher: I did...so you in
Rckcrwlr: Oh Yeah!!!!

So this thread is going to be marathon smoking of 12 Baby Boulders...

Now the questions:

Should I go with 2 sessions of 6 that will take about 10 hours or 3 sessions of 4  that will take about 6 hours.

By the way...these are being made for someone that I cannot say right now.  Once I get the OK, I will let you know.

I'll wait for our resident boulder expert STC to wade in but I would go for the 2 sessions.

Sounds like a great deal for you though. 8)

That's what I was thinking too.  I could probably hang all 6 at different lengths to ensure that there is enough "air" flow.

Nice deal Rckcrwlr. It is some work but the reward is worthwhile. I have never done one of these as they are pretty pricey here but I will bite the bullet one day. Are you going to use CT on them or something else?

Definitely 2 sessions - 6 each.
You don't have to hang them, but they sure do look prettier when they are done that way!  :D

Find yourself a couple...and don't share them.  I made that mistake and now to get one for myself, I need to make 3.  LOL

Yes on the CT... That with my "Wing Dust" and it will give a great crust and a little spice.  It's usually a surprise at the end when someone eats it.  Not overpowering at all.

I like the look after they hang also.  First attempt on these, I was not prepared for the 10 hours.  This time I will be ready.

Think it's a fair trade STC?  Now I just need to work out something for some Brisket...  LOL

They are 3 pound turkey breast roasts..  All white meat.  They come frozen solid, and they roll around like little boulders when they fall out of your freezer.

They make bigger ones as well.  Closer to 10 pounds each.

Those suckers are expensive - but you get a ton of meat out of them.

Yeah, thats why i ended up doing a whole chicken instead of one of those...I think I may make a run down to Washington and see what they go for there

Still a deal...how much are you paying for smoked turkey breast at the deli counter?  I know that my wife was paying close to $9 per pound for that stuff, and it isn't close to what you will experience.  She refuses to buy it anymore.

So he backed down to 10. This will result in two sessions of 5 breasts.

I unpacked them and now will remove the skin. I know, you're thinking, why?

Mainly using this for lunch meat and nibbling on, so having the crust all the way around is better. The skin normally falls off once slicing anyway.

Now that they are ready to be pampered...

I gathered up the Carolina Treet (CT) and Wing Dust...

Started by rubbing the CT, making sure that it covers the breast (This is the Glue)

Then massaging the Wing Dust.  Sprinkling on liberally and really working into the flesh.

They now will rest in the Refrig until tomorrow morning.

Yanking the skin out of the netting is a great idea...    I'm going to do that next time as well.

The ones I have done I just pulled the skin off prior to slicing.  Figured the skin helped keep them moist.

So I delivered them just now.  As I walked in the door he was standing there with a knife.  I know, he's a butcher, he should have a knife...no, he was ready to cut into a boulder.  He choose to cut the Mesquite Smoked one's being that they were still warm.

Oh my God...that was incredible.  And he gave me the end.  A little over half of one was gone when I left, and all I had was the end and one slice.

So now I can tell you where these Baby Boulders went...

The AFC Champion, Pittsburgh Steelers, chowed on my Baby Boulders and Smoked Cheese prior to the game.

Yeap, they are famous birds...

If you looked close at pics of Brett Keisel, you could see some fragments of a Baby Boulder in his beard.  LOL

It took me a lot not to tell you when you guessed.

I am waiting for the call.  If any of them are superstitious, there will be some Baby Boulders heading to the Lone Star State.
