I have a chicken ready to go in the brine as soon as the brine cools off. Tomorrow I will smoke it for 3 hrs @ 210* (still have not decided what wood) then it will go into the Big Easy untill I get an IT of 165*. Anybody see any problems with that or have any suggestions?
Sounds like a perfect plan. You will get the great smoked flavor and crispy skin. And as Smoker Pete does you can place TBE basket into the OBS and then move it to TBE for the finish with no muss, no fuss ;D
In the Brine.

Hickory. ;D
Like to see a picture of the finished product before it disappears...sounds like it will be a winner..

Great lookin' yardbird Bear!!! I bet it tasted as good as it looks.
Looks perfect ;D
Thanks guys, it was great tasting chicken. Will definatly be doing more of them. real nice smoky flavor, very moist and tender meat and the skin was nice and crisp. It dosen't get any better than that.
Dang, that was one huge chicken... Looks great.
Great lookin yard bird, been doin it that way ever sense I got my TBE, finished off on the grill before that.
Great looking hen, I,v also been doing my chicken that way love how tbe finishes it off. Just a tip about tbe try to keep the food inside the basket about 4in off the bottom it will cook more evenly. The bottom has a dead zone and doesn,t cook as evenly. ;)
Bear do you have the leg racks for TBE? I do my chicken legs (15 at a time) this way and they are awesome ;D

TBE and SRG are both INFRARED cookers not deep fryers. They use INFRARED to fry things like turkeys, chickens, ribs, roast and whatever you want to try.
Bradley Smoker and TBE/SRG are the perfect combo!
oohhh.. cool I want one!
ok, just bought a chicken ;D. so now i need to know how much smoke to put on it. thanks!!
I saw the three hour in the smoker part, but that sounds like a LOT of smoke for a little bird ;)
I have a question on the TBE, how do they compare to deep frying with peanut oil for flavor?
I have deep fried many of turkeys with peanut oil and I am wondering if you would get the same flavor with a TBE?
The BE is an oilless cooker. You could rub the bird with peanut oil and even baste it a couple of times if you like. Or you could go with a brined turkey. I had never brined and turkey before Easter so we tried it. It was aewsome and we also smoked it for 2 hours before putting it in the big easy. Best, juiciest, tastiest, turkey I have ever eaten.

I deep fried many turkeys in peanut oul befor I bought TBE, in my opinion the bird comes out of the oiless deepfryer tasting better
We brined one for easter. I have never brined before. I came out pretty dark coloured which freaked me out. I thought it was way over done and my thermos were wrong. But it was awesome. The flavour was great. I will brine again, but I am juat as happy with a rub of oil and some shake on spices. I have never had a deep fryed, but I don't think I am missing anything. They come out so good how could a deepfryed be better.
I keep seeing these beautiful birds coming out of these oilless fryers and words like just as good as a oil fryer, I guess I am going to have to get me one...

Get one best companion you can buy for a Bradley! I'd go for an SRG since you can do more with it.
Correction: better than a deepfryer. You don't have to deal with all the hot oil and you add no calories to the bird. I know I know, you don't get an oily bird cause the heat seals the bird but you know that there will be some aborption. You won't be sorry for getting one at all.

Either way you go, you will not regret it if you cook a lot of Chicken or Turkey. Wings smoked in the Bradley and cooked in the TBE are hands down the best!

I am going to do two birds this week and place them in the TBE. I found a great deal on a TBE last year right after Thanksgiving weekend at Lowe's. There were two left and marked down to $29 each. I purchased one and wish I had bought the second as a backup. I love to do chickens in my TBE but now will look forward to doing them with smoke first.
Prepare for orgasm. That will be the best chicken you ever eat.

3 hours with Alder Smoke at 220 until IT was 135. Transferred Basket to heated TBE for additional 45 min and IT was 170. Pulled bird out and rest for as long as I could stand it, (10 min). Ate both wings a leg, and most of one thigh. I will let the rest cool and refrigerate for another day. I have a second bird with Jan's Rub waiting for it's turn tomorrow.
The chicken was excellent and had a nice crisp skin. Probably could have stopped after two hours of alder smoke. I will try maple on the next bird.
That bird looks gooood!
Nice color on that bird.
