I haven't had the time to be on here much, but I had to just to rave about this salmon recipe. It is just awesome!!  ;D

Kummoks recipe is second to none! Anybody who hasn't tried it... you're missing out!  ;)

Might I add that if you can get your hands on fresh (never frozen) Alaskan King, and follow Kummok's recipe to the letter, you will get more praise than you can handle. One of my more critical friends remarked that he doubted that even Jesus himself could do better. Every salmon smoke I have done since has just been additions to the brine, and perhaps a quick maple syrup bath before forming the pelicle.

As for where to get fresh caught king..... make a friend in a fine dining seafood restaurant and have him get it for you at cost.  My brother's restaurant has it flown in daily ;D and it runs between 12-15 per pound for boneless steaks!!!
