After some fat got in the way but really it was at low heat, just fatty fish

Brought some to work this morning and they are almost all gone already  :'(

I really liked the texture of the fish. Not to dry and just enough moisture. Next time I won't buy the steelhead salmon(rainbow). I believe they where caught in Lake superior and they tend to be on the fatty side being a very deep cold lake. These things were put in the smoker at 10:30 AM and never came out till 7:30PM and I think it took that long because of the fat content of the fish. Also I will do a glaze of thick teriyaki half way through the smoke to give them more flaver.
