Title: Question about Pork FTC.

I JUST pulled out my Pork Shoulder from a 4hr smoke and 10hr total cook time (190 IT). Foiled, toweled and into the cooler. Was hoping to keep it in there for a min 4hrs but that would put be past my bedtime.

Question is FTC greater than 4hrs a bad thing? i was thinking upwards of 7-8hrs. I suppose I could always set my alarm and get it in 4 but would rather not.

Your thoughts?

I would NOT try the 7 to 8 hrs.  4 is pushing it.  I have done 4 before but it was approaching almost too low a temp when I unwrapped it.

I'll stay up late and unwrap between the 3-4 hr mark.
