ok, most casings are talked in mm's , this book states sm, med,large and footage of each , so what would be sm,med and lg in mm's ?

I wouldnt know. But you can use any size you want when stuffing. Ive seen them sold in MM or inches both. Lenghts change depending on who you buy from.
