Title: Bradley Pecan Smoked Whole Chicken With TBE Finish
Post by: muebe on May 15, 2011, 12:00:31 PM
I had a whole chicken I pulled from the deep freeze. I used my new silicone bands to keep the legs/wings tucked in place and the chicken was placed on the beer can holder. Chicken was rubbed with peanut oil and then Costco's Sweet Mesquite rub. I put the TBE basket in the Bradley and set the PID to convection with 6 pecan pucks at 225F for 2.3 hours. After two hours the IT of the chicken was 128F. I then moved it straight to the TBE for the finish until IT was 158F. Nice crispy skin and juicy smoked meat! Bradley and TBE...what a great combo for chicken ;D

Thinking about getting a TBE, how do you like yours?

I have deep fired many turkeys, and my concern is that the TBE would not be able to match that flavor.

My understanding is it uses infrared to fry the bird instead of using oil.  Is that correct?

I havent used my oil fryer sense I got TBE, the only flavor youll miss is the flavor of the oil.

I now rub my birds with peanut oil and yes TBE uses infrared to cook the meat, works GREAT.

Great looking bird muebe!

TBE and SRG are both great cookers and when you team them up with the Bradley it's win win!

I have had many folks tell me my turkeys turn out better in TBE or SRG then in an OIL FRIER!

My brother-in-law has a Turkey fryer and it does turn out moist and delicious from it. But I would not say it is better than a TBE Turkey...

Sure a Turkey fryer can cook a little faster(7 minutes a lb and 10 for TBE) but it takes at least 30 minutes to bring the oil up to temp meanwhile a TBE is ready within a few minutes.

You can put rubs on the fried Turkey but as soon as you drop it in then the rub comes off...TBE the rub stays on the skin.

Cleaning a Turkey Fryer is not fun. Disposing or storage of the oil is a real pain. When you are done with TBE just run it for 15 minutes to burn everything, scrape the bottom of the cooker, and then dump the oil catch...very easy.

The TBE and SRG are so versatile. You can cook ribs, chicken, fish, steaks, and even bake in the thing. Try that with a Turkey Fryer.

I cannot recommend these cookers enough! If you do not have one you should. If you do and have not I hope to change your mind ;)

Go for the New SRG instead of TBE, you can do a lot more with it.

Believe me I know I have 2 of them  ;D

Yes it's just a larger size but the same cooking concept. It will smoke if you use blocks of wood or the "Tommy Ring" TM with woodm pellets.  This is a 10 to 11 in spring form cake ring that the basket sits on and it will keep wood pellets up on the chamber so they will start to smoke.

TBE is 16 pounds and SRG I believe is 25 pounds...

TBE is $99 and new model SRG is $199

So I guess the question is, is the SRG worth the extra $100?

I'm happy with TBE and grill on it too, besides I never buy a turkey bigger than 12 lb anyway.  ;D

Yes it is, take it from me it's worth the money!.. I own 2 of them and I can't see doing without them.

I just wish I had the money rt now to get the newest version

Now for my two cents ;)

I have two TBEs. I just purchased a new one. Now I really like the SRG but the TBE works better for me...

1. The price of $99 worked out better for my second purchase. Left me more money toward my new pellet grill ;D

2. I have a SRG grill(just the grill itself) that I bought from Char-Broil for $50 with shipping. I added some clamps so it will not slide around the top of the TBE and it works great. I can remove it and put it on either TBE when needed.

3. I already have two smokers(gas and electric) and have a third one on the way(pellet) so the smoking feature of the SRG is something that I do not really need.

4. Size...I actually like the smaller size of the TBE. It is a little easier to transport on trips. I never do any birds larger than 16 lbs also.

Now as others have stated you need to decide what you want to do with it. If you already have a nice grill that you use and a smoker than maybe the TBE is a better choice for you. If you do not have any cookers than the SRG is a great choice and value for the money.

Now I am taking my two cents back because I am dang near broke with all the cooking equipment i have been buying lately :D

Did you rub seasoning under the skin or just on out side?  was it brined?

After your and TMB comments, I am now looking into the purchase of a SRG to tandem with my Bradley and my old Brinkman log pit.  Any suggestions on where for the best deal?

Talked the wife into letting me get a TBE. I will have to give this a try as for sure.

Do you think you could fit 2 chickens in the TBE if you use the wing/drumstick racks? Put one on the bottom and one on top of the rack.

I just took delivery of TBE "Bunk Bed Basket". It is a shallow basket that fits into the large main basket and allows you to stack what ever you're cooking doubling the amount cooked. You can find them on the Char-broil site or the Home Depot site where I got mine.
