Title: Second smoke, first try at ribs.....

Smoked a rack of pork spare ribs today for the first time.  Found a rub recipe that looked good and coated the rack, let sit overnight in the fridge (yes, I took off the membrane on the rack).  Did the 3-2-1 method with Hickory and they turned out great.  I didn't have any apple juice to put on them before I wrapped them in foil so I just added a little water.  Next time I might cut back on the paprika and black pepper a little bit in the rub recipe.  The ribs were a little spicy but not too bad.  Family enjoyed them so all is good.  Sorry, no pictures.
