Title: Smoked up some Cornish Hens today....

First try at these in my OBS.  Rubbed em down with Jans rub yesterday and let them sit overnight in the fridge (only rubbed on skin, couldn't really figure out how to get it under the skin, any advice?).  Used apple wood for 1hr 20min then cooked until 165deg. in breast meat.  Turned out GREAT!  Juicy and the apple wood was a great compliment to the meat.  Don't know how much of the rub flavor made it through the skin but I assume some did.  This is a keeper.

I could write out step by step directions, but the best way to learn is to watch one of the videos on YouTube. Doing a search for "applying rub under the skin of chicken", should pull up several videos.

Applying rub under the skin of cornish hens is a little tricky, especially if you have large hands. So you can use a small spoon to loosen the skin, if your fingers are too big.

How long did it take to get temp to 165?

sounds like a great  idea and  should be able to get it under the skin
