Title: Tequila/ lime jerky

Hey guy's & gal's,
made a batch of Tequila lime Jerky, not to bad for the first batch, tweaking will be in order.

Recipe for 1 lb:
1 cup Tequila
1/2 cup lime juice
1 jalapeno chopped w/half of seeds
2 Tbs soy sauce
1/4 cup brown sugar
1 Tbs kosher salt
1 tbs coarse pepper
1 clove garlic minced
1/4 cup finely chopped cilantro (optional)

Marinade 12-24 hrs in your favorite cut of meat....I used London Broil for this.

Smoked 4 pucks of hickory @ 160°....finished @ 170°

Looks good ;)

I know you can taste the lime but can you taste the tequila?

There is a hint of it, more so if you don't use any smoke. The wife wanted a rack with out the smoke and it was good.

Looks good! How about the Jalopeno? How strong was the heat?

Ok one problem I see here, after having marinaded the meat you then discard the brine and that is a full cup of Tequila going down the drain. Isn't that a form of alcohol abuse?  ;D

Just a hint of jalapeno heat...more if you don't rinse the marinade off.

No alcohol abuse here....used the cheap stuff...LOL

Well it certainly good, I have some jerky marinading right now in the fridge, this just plain old jerky... but yours sure sounds good...
