Title: Last Nights Dinner
Post by: zueth on June 22, 2011, 08:58:53 AM
One of my favorite ways to eat left over pulled pork is to cook some brown or white rice, grill some vegetables on the BBQ, warm up the pork in the microwave and mix it all together with a little bit of SOY VAY and Rooster.

We decided to grill Zucchini, Squash, and red peppers.  I cut up the vegetables and put them in a bowl with olive oil, salt, pepper, and garlic powder.  Then preheated the grill for about 400-450.  When the BBQ was preheated I put down two frog mats together and grilled the veggies on top four about 6-8 minutes. While grilling the veggies I had put 2 cups of pulled pork in a bowl then wrapped with plastic wrap and microwaved until warm.

When veggies were done, i put some right on a plate, then the pork, then the veggies and mixed with some SOY VAY and rooster.  It was very good.
