Had some stealhead/rainbow trout to smoke up today. Did the Kummok brine over night. Air dried for three hours and into the smoker with 2&1/2 hours of apply smoke. Set the arbur @ 120*F for 2 hours. The arbur sat at 130-132*F and never came on. Smoke generator got it to that temp by itself. First day we have had 90*F weather with no wind. Don't like rushing smoked fish, trout has a lot of fat and i'm already starting to see white forming on the fish.  >:(
Hope it will come out alright. Will try to dab it off with paper towels half way and see what happens.

I think you could just padd it off with a paper towel. I think squirt is no to something. I started to get some boogers so I had to turn down the low fire setting on my gas burner because My smoker was adjusted to run in colder temperatures. after I turned it down things went fine.

OK last 30 or 40 min. with a coating of honey garlic. They can be pulled now but i thought I would try something different.

Just letting the honey garlic coating bake in. will update in a few minutes. From what I tasted its true Kummok salmon even if its just rainbow trout  ;D

Alright all done. And I have to say it is gooooooooood  ;)
The top off of honey garlic just put it over the top. Going to let it cool before vac. seal and give out to my son in law (he is redoing my rusted truck so he deserves some) and sending some over to my X-father-in-law(the best father-in-law any one could have)

All Vac sealed and ready to go out the door. I asked my 7 going on 8 year old son if he wanted some and he said Dad don't you have any bread????? I said yes son lots..... why??? I would like a peanut butter and honey sandwitch, Dam I just give up. KIDS

Those look great Don. Man that fish had some oil in it. I can see it in the vac seal bags. That will make it so nice and moist. That will be great. It would probably go good with a peanut butter and honey sandwich.

Well I live in Canadian land (once owned by the natives and still paying for it :() I found that stuff in bulk at the only bulk food warehouse we have here in Thunder Bay. It's called The Great Canadian Ware House. (imagine that :) ) We don't have a Costco here in town or anything like that.

Devo, that Great Canadian Warehouse -- is it at 319 Fort William Rd,  Thunder Bay,  ON  P7B 2Z2 ??? (Google Maps is great!)

If so, it's owned by Loblaws and we have one here in Ontario I have to visit soon. (Much better than Costo as it focuses on restaurant supply).

Did you brush it on? And at what point in the smoking?

I brushed it on. I would say probably the last half hour, but I think next time I would give it a little longer to glaze. Kind of along the same line you would do with ribs.

Thanks! I visited the Warehouse store here and they don't seem to carry it. They did have a 3L jug by ED Smith, but I took a pass for now. I've got some honey so I may try making a little of my own.

I've just put some sockeye in my OBS. Can hardly wait.

devo... that is really some awesome smoked trout, really like the sound of that garlic honey..now how long before you need to make more..?
