Title: Bacon Wrapped Stuffed Pecan Chicken Breast

Decided last night to do a couple of stuffed bacon wrapped chicken breasts in the DBS.  I cut the chicken in half being careful not to slice all the way through and folded the chicken open.  Then I took some baby spinach and microwaved for about 3 minutes, string every minute until wilted. Next shredded some pepper jack cheese to mix in.  Next added some sour cream and minced garlic.  Then took the mixture and spooned it evenly between the four pieces of chicken.  Then I closed the chicken back up and season with John Henry's Pecan Rub Seasoning.  Next I wrapped the chicken with four pieces of bacon and secured with tooth picks.  Then into the smoke at 220 with Pecan rolling until IT of 160.  That ended taking about 2 hours and 20 minutes, I smoke with Pecan the whole time.  While chicken was cooking I took two pieces of corn and pull back the husks removing the silk, then soaked the corn for about 1 hour in water.  After that I put the corn in the smoke for about 1 hour and 20 minutes.  Here is the corn and chicken in the smoker:

While Chicken and Corn was cooking I peeled and cut two sweet potatoes into chunks and cooked them over low heat for about 45 minutes with 2 TBL heavy cream, 4 TBL butter, 1/2 tsp salt, 1 tsp sugar and a pinch of pepper.  Then I mashed the potatoes with a potato masher off heat. Chicken looks great! Nice color on the bacon too! So how was the corn?

Corn was good, a little firmer than I like, but had good flavor, might cook it for a little longer next time.

Nice,,, very nice.

That plate of grub looks GREAT.

Heck Id even eat the sweet tater the way you cooked them,, and I dont much like sweet taters.

I try to lay them on the rack with the ends of the bacon on the bottom,, dont need as many tooth picks that way.  ;D

Just showed this picture to my wife, she is now headed over to get some fresh corn from a local farmer that we have known for 60 years...lol...fresh corn on the cobb and a tomato sandwich and some local cantaloupe we have a meal...

Great looking meal.  I like the ingredients for your chicken breast stuffing.  I can bet it was very tasty.
