Title: 10lb Meadow Creek Pork Butt

I got a Big 'Ol butt getting happy with some meadow creek as we speak.  I scored the fat cap, rubbed it down, slapped it a bit and wrapped up tight.  I was thinkin'  (yeah I know, just threw ya'll a softball) 'bout slatherin' with sum CYM butt after seeing the wonderful color of the MC I am having second thoughts.  Any suggestions?

Matt let it ride without the CYM. You don't need it with the Meadow Creek. I didn't use it on mine and it was great.

You will be tempted to add more Meadow Creek as it is going into the smoker. DON'T! It will just dry out on top and look like this.

Get that new smoker broke in Matt ;D

So what are your thoughts about how well the jerky dried in the MES? Did you have to rotate your racks a lot? You still gonna install a fan?

I thought it dried out well in the MB.  I did rotate the racks probably 6-8 times.  Since it was a test run I bought the pre-cut beef for stew and the pieces were not all unifrom and some got done faster than others.  I also didnt like the teriyaki marinade or the tender quick.  I am going to do a couple more runs before I make any decision on a fan or dehydrator.  This time I am going to buy a couple london broils and cut myself.

It ftc'd for a few hours and I will pull tomorrow and reheat in the crock pot.  This sucker took two spatula's to get outta the smoker.  It's a biggun   ;D

Whats Meadow Creek? Just a rub? Why not use the mustard slather?

Greg Meadow Creek is one of them Nepas rubs he gets from the Amish stores. They have a regular and a spicy. When he remembers he is supposed to be mailing me some of the regular.

When you let it sit for a few hours. The stuff creates this nice gel almost like the that red Chinese stuff they was talking about in another thread. Not to mention it does get a really nice bark by itself. I dont know why I didn't use mustard, just lazy I guess ;D
