My grandfather always told me they built a small place in the fire place chimney to store bacon. Is this what your talking about?

I sent a msg to a Swiss guy I know living in the Philippines. He does his with a TQ/Brown Sugar dry rub with a standard Pastrami Rub. He had no idea how authentic it was. The recipe was from his grandma, who called it "Black Forest Bacon".
