Hello All,
I have been smoking for about 2 years now, starting with a Cameron stove-top hot smoker, and then getting the yen to do cold-smoking and getting a Bradley late last year. I enjoy using both, the Cameron being good for impulsive things with small quantities and little preparation, and the Bradley being brilliant for more considered cold-smoking projects such as salmon and trout, with the odd bit of cheese or other fish thrown in to make best use of the smoke. Recipe's from this forum helped me greatly with my first two salmon smoking projects.
At about the same time I also started keeping bees, and expect my first honey-harvest this year, and so will be exploring what the forums database on ways of using honey in marinades and brining.
I also plan to try home curing bacon as soon as I find a local supplier of curing salt.
