I live in Alaska and was wondering about hot smoking during Winter months... Minus temps! A home made insulated smoke box... I assume that it's possible if the hot temps can be maintained with the smoke generator during the smoking process. Any tips would be greatly appreciated.
Do you have a heat source in your smoker other than the smoke generator?
If the smoke generator is all you have, I would say no. but you could add a hot plate or two.
Wasn't sure how the smoke generator worked. Now I do. Thank you much. I may just purchase the 6-rack.
You won't go wrong with the 6 rack. Especially if you start making some homemade Summer Sausage. Gives you the extra room to hang your sausage. As you will find wandering around the forum. You have a whole bunch of opportunities out there for things to smoke and eat. I guess what I am trying to say is there is more uses for your smoker than for just smoking fish a couple times a year.
An easy aid to cold weather smoking is to build a "blanket" out of the insulation you find used to wrap hot water tanks, sticky backed velcro and a pair of scissors make it easy. Any cold breeze will make it hard to maintain the temp even with a blankie or extra element so finding a sheltered spot is important. Here's my obs all wrapped up

I think I'll vent from the garage during Winter months.
