I would like to do pulled beef instead of pulled pork. I am thinking of using a chuck roast and cooking/smoking just like I would a pork shoulder for pulled pork? would that work?
Just take to IT of 195, FTC, then shred?
Yep.......chuckie is great for pulled beef.........cooks just like a butt.
A big ol 7 bone roast works good also.
I've found that boating the beef with some liquid (beer, wine, apple juice, whatever) and covering with foil after the smoke phase results in a much moister end result.
Chuckie's pull nice and that is some good eating.

Ok, so sounds like I need to use the ol Texas Crutch, don't do that with Pulled Pork. But, if that is what needs to be done with Beef I will do that. You normally use Beef Broth?

your on the right track and the others have set you along the right line... also after the smoke empty the bowl and add some flavored drink.. beer, oj soda.... any thing but water as it adds a better taste

Can you really tell a difference when you do this?
i can, try the same cut of meat with the same seasoning,,,, smoke one with water in the bowl.. the other with cheap soda,,,, and you will notice a huge difference.... at least i can
