All out of home grown chickens so I picked up a chicken on sale and cooked it up last night.

The flappers were cut off  ???  I had to tie the wings up so they wouldnt burn.

All rubbed down with canola oil and some my rub and ready for the smoker.

After 2 hr of Apple with the smoker set at 225 F.

Dropped in TBE with some taters.

Around 45 min later.

You really have this poultry smoke and cook thing down to perfection.  This looks beautiful, like so many other good posts you have made.  Thanks for all the good info.

OH My! Nothing I like better then chicken... well except bacon. But that looks grand! and the sides are killer too!

Momma set the table with her Christmas dishes so Taz had to sit and watch.

Man was he pissed! ;D

All the white meat is gone and the dark meat is what I use for chicken noodle soup.

Gonna simmer the carcase tonight and make some soup tomarrow.

My wife did the same thing with the carcus of the first chicken I smoked (about a week ago) and the soup turned out great. There was a slight smokey flavour, not overpowering, just right.
