I'm smoken some Pork ribs today. I used the Bradley pictoral as a guide line.  Im not sure how accurate my temp is on my BDS. I am setting it at 230 at first and then down to 220, for three hrs, then use apple juice for three, then mop it for one hr more .  I will let you all know if I will eating ribs tonight or something else. S/S
I plan on buying the Maverick 732 and seal the probe. It appears that is the meter of choice from you guys.  S/S

 Yes the 732 seems to be the goto thermo here. Good luck.
