Title: Christmas Cheese

My mother came to stay with us just before Thanksgiving and will be here until Feb. My sister and my niece came for Thanksgiving and I made a mistake. While they were here I made a smoked Turkey in the SRG, brought out some of the pepperoni and sausage, the pastrami, and a couple of other goodies. Now they tell me they want to come for Christmas and this time my BIL and other niece will be coming. They say it is to see us and my mom, but I think they are coming for the food. It will be great to have everyone together but I need to start smoking to be ready.
So this weekend it will be cheese and 4 lbs of pistachios; next weekend jerky and pastrami; weekend after that will be sausage- kielbasa, Italian, pepperoni, and hot dogs plus some pork butt;will do some ABTs Christmas eve; will also make some Polish pierogi and golabki (stuffed cabbage) for Christmas Eve dinner. Still haven't figured out what to do for Christmas dinner.

Anyway, here is the cheese in the racks

Starting in the left rack - top L to R
Chedder and Swiss; next row pepper jack and chedder; next -cream cheese (for the ABTs) Pepper jack and more cream cheese. Made a mistake and the pepper jack I bought was slices, so i just stacked them.
Right rack: top L-R Chipolte Gouda; regular Gouda; next row - 2 chedders and a Gouda;last row - chedder and 3 pepper Colby jack.

Everybody loaded in the Bradley set up for cold smoke.

I was thinking about doing some cheese for Christmas to give away. Now that I think about it I may have to shoot for "Groundhog Day"... Boy is this year flying by!  :o

Please let me know how it comes out as I haven't smoked any cheese yet!  :D

With the cream cheese, how long do you let that sit in the fridge before using?

I plan on making the ABTs on th 22nd or 23rd -so about 3 weeks. You probably can leave them less.

When you put the smoked cream cheese in the ABTs do you resmoke?

Yes I mix up a filling with cream cheese, some cooked sausage, some fried chopped peppers, garlic, and onions. awrap in bacon and smoke until done.

Nice, Great Variety!  I bet each slice of the pepper jack slices will have different smoke flavor intensities for each slice???
