Hello, I just smoked a batch of salmon according to kummock temp. settings, and noticed the tops of the fish were more than done but the middle wasn't cooked all the way need help diagnosing what went wrong, and how to reheat the fish. maybe oven? the only thing i can think of is i pamed the fish on the skin side rather than spraying the racks.  I have used kummocks recipe before with excellent success.

If i look under the skin i can see its pretty moist still.  Should i maybe pull the skin off and reheat the back side of fish to save it?

I'm not sure what happened there. to be clear--it's definately not cooked or is it cooked but too moist?
