I just ordered 1 of these an am wondering if it will control the smoke generator on my newer digital  smoker?

Yes. Hopefully someone else can chime in as to what cord they use to go from the PID (dual probe) to the smoke generator. I don't have it and dont know what it looks like.
You can delay the smoke process at a particular stage.
Exmpl- cook for hour to dry sausage then on stage 2, have it start the smoke

Personally I would plug the generator into the wall socket not the pid. If you want to delay the smoke just don't advance your bucks to the burner.
