I tried a new rub on 2 racks of spare ribs this past weekend. The Rub was a basic rub, but instead of using brown sugar I used molasses powder. After smoking them the molasses powder carmalized into something I could only describe as rock candy.[xx(] After chipping off the black rock hard stuff the ribs were actually not bad. But not my best[V]. Momma said there would be days like this. So FYI, molasses powder does not work in rubs. Back to the drawing board[:)]
