I just smoked two sika deer hams. they came out perfect! When I cut into the first one, juices poured out and it was perfect inside.
Here's what I did:
two small hams bone in(sika deer are a tiny creature)
Marinade:
4 tbs soy sauce, two types of hot sauce, worstersire, and vinigar
1/2 cup millk
1/4 bottle italian dressing
4 beef bullion cubes boiled in 2 1/2 cups water, reduced in half and cooled
dab of this pinch of that, marinaide for 2 days.
put extra thick bacon on the rack above and put them in. I got my temp to 220ish after about 45-1hr and I kept it there for another almost 4 hours. I checked the internal temp and it was a little over 160 deg and I took it out. I took one slice and I am in heaven! They are in foil cooling now and I am going to put them in the fridge after they cool. good eating tomorrow!!!! (and a little tonight)
