Title: First try at pepperoni sticks

Playing with my Excalibrator food dehydrator and jerky gun I picked up a few weeks back.

Decided to make some snack Sticks.
Do not have a stuffer or casing so making them case-less.
2 1/2lb ground beef.
Seasonings (Shown in picture):
- 1 tsp Morton Tender Quick cure per Lb. of meat (plain salt will NOT work)
- 1/2 tsp Crushed Red pepper
- 1 tsp Fennel Seed
- 1/2 tsp Anise Seed
- 1 tsp Mustard Seed
- 1/2 tsp Garlic powder
- 1 1/2 tsp Black pepper
- 2 1/2 oz. water.

Placed all in my little food processor and chopped all the spices up.

Mixed the spice mix with Lean ground chuck.

Loaded the jerky gun up with the stick tip on it ad shot them out.

Ready for the dehydrator, which is where they are now.
More to come later as they dry.

Update
I switched them from the dehydrator to the oven because they had a ground beef base. The dehydrator only goes to 145° and I though I should take them to 160°.

Cut and ready to paper bag, then into the fridge.

They got a little too hot at some point as they some did "fat out" a little.

Only the 3rd time I've used it but no trouble from it yet.
Why? Should I be watching out for something?

Ya done real good partner, really like the color...they came real well for the first time...
